Penang Char Kuey Teow

Ingredients

  • 2 tbsp of light soy sauce
  • 1 tbsp of dark soy sauce
  • 1/2 tbsp of oyster sauce
  • 1/2 tbsp of fish sauce
  • 1 tsp of sugar
  • 1/2 tsp of pepper
  • 2 tbsp of oil
  • 1 tbsp of chilli paste (cili boh)
  • 1 garlic clove(s)
  • 1/2 of a fish cake
  • 6 prawns
  • 180g of rice noodles
  • 1 egg
  • Bean sprouts
  • Chives

Direction

  1. Mix soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar and pepper in a bowl evenly
  2. Add oil to wok and heat over high heat. Add minced garlic and chilli paste. Stir-fry until fragrant.
  3. Add prawns and fish cake. Sauté for around 30 seconds.
  4. Then, add noodles to wok and stir-fry them while adding few spoonfuls of sauce at a time. After finishing all the sauce, add an egg to the noodles.
  5. Finally, add chopped Chinese chives and bean sprouts. Continue stir-frying noodles until vegetables are cooked.
  6. Serve hot and enjoy!
